Air-Fried Green Tomatoes

Ingredients

  • 1 1/2 lbs. green tomatoes, sliced 1/4-inch thick, seeded if desired
  • 1 tsp kosher salt, divided
  • 1/2 cup panko, lightly crushed
  • 1/2 cup plain cornmeal
  • 1/2 cup quick-mixing flour
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 3 large eggs
  • Hot sauce, to serve

Directions

  1. Place tomato slices in a single layer on paper towels; sprinkle 1/2 tsp salt all over tomatoes. Let stand for 30 minutes. Pat dry with paper towels.

  2. In a medium bowl, whisk together crushed panko, cornmeal, flour, paprika, pepper and remaining 1/2 tsp salt. In a shallow dish, beat eggs. Dip tomato slices, one at a time, in egg, letting excess drip off. Dredge in bread crumb mixture, pressing to adhere.

  3. eheat air fryer, if needed to 400.

  4. Working in batches, liberally spray tomatoes all over with cooking spray, and place in air fryer basket in a single layer.

  5. Set air fryer temp to 400 and cook until golden brown on both sides, 10 to 12 minutes. Serve immediately with hot sauce.
