Skillet Chicken with Pickled Tomatoes

Ingredients

  • 2 tbsp. olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 chicken breasts
  • 1/2 cup chopped smoked sausage
  • 1 cup drained Quick-Pickled Cherry Tomatoes (see recipe)
  • 2 tbsp. chopped fresh parsley

Directions

  1. eheat oven to 400.

  2. In a 10-inch cast-iron skillet, heat oil over medium-high heat.

  3. Sprinkle salt and pepper all over chicken. Cook chicken until lightly browned, about 2 minutes per side. Remove from skillet. Add sausage to skillet; cook, stirring occasionally, until lightly browned, about 2 minutes. Return chicken to skillet. Add Quick-Pickled Cherry Tomatoes.

  4. Bake until tomatoes begin to burst and chicken is cooked through, about 10 minutes. Sprinkle with parsley before serving.
