Almond-Grape Chicken Salad

Ingredients

  • 4 cups shredded cooked chicken
  • 3/4 cup mayo
  • 2/3 cup red grapes, halved
  • 1/2 cup sliced almonds
  • 2 tbsp. minced shallot
  • 2 tbsp. chopped fresh parsley
  • 1 tsp lemon zest
  • 1 1/2 tbsp. fresh lemon juice
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder

Directions

  1. In a large bowl, stir together all ingredients until well combined. Cover and refrigerate for up to 4 days.
