Minnestrone soup

Serves 6 people

Ingredients

  • 1 lb Italian sausage
  • 4 cups water
  • 2-4 celery, stalks of, diced
  • 1 onion, chopped
  • 1 clove of garlic
  • 1 28-oz can crushed tomatoes
  • 2-4 carrots, sliced
  • 1 jalapeno, optional
  • 12 oz beef broth (1.5 cups)
  • 1 tsp oregeno
  • 1/2 tsp basil
  • 1 T parsley
  • 1 15-oz can chickpeas
  • green beans
  • 1/2 tsp sugar
  • noodles (optional)
  • romano or parmesan cheese

Directions

  1. Remove casing on Italian sausage and brown. Add ingredients through parsley and simmer for 6 hours.

  2. Then add chickpeas, grean beans, sugar, and noodles.

  3. Simmer 1 hour more.

  4. Serve with romano or parmesan cheese.
