Bacon Cheeseburgers

Ingredients

  • 16 strips bacon
  • 4 lbs. ground beef
  • 1/3 cup heavy cream
  • 2 tsp Worcestershire
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 6 to 8 dashes hot sauce
  • Vegetable oil, for the grill
  • 8 slices cheddar
  • 3 tbsp salted butter, softened
  • 8 kaiser rolls, split Iceberg, tomato slices and dill pickle slices, for topping

Directions

  1. Preheat a grill to medium. Meanwhile, set a large skillet over medium heat. Working in batches, cook the bacon, turning occasionally, until crispy, 5 to 6 minutes. Remove to a paper towel-lined plate.

  2. Put the ground beef in a large bowl. Add the heavy cream, Worcestershire, salt, pepper and hot sauce. Mix the meat well with your hands. Form into 8 patties.

  3. Oil the grill grates. Grill the patties until charred, about 3 minutes per side for medium doneness; top each with a slice of cheese in the last 2 minutes of cooking.

  4. Butter the rolls, then toast on the grill, about 1 minute.

  5. Place the patties on the rolls and top each with a lettuce leaf, tomato slice, some pickle slices and 2 strips of bacon.
