Creamy-Cheesy Scrambled Eggs with Basil

Ingredients

  • 8 eggs
  • 1/3 cup sour cream
  • 1 cup shredded mozzarella
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp butter
  • 2 tbsp minced fresh basil

Directions

  1. Whisk eggs and sour cream in a bowl until creamy and smooth. Stir in cheese and season with salt and pepper.

  2. Melt butter in a large skillet over medium heat. Pour in egg mixture; cook, gently folding occasionally with a spatula, until eggs each desired consistency, about 3 minutes. Fold in basil during the last minute of cooking, or sprinkle on just before serving.
