Spinach-Artichoke Stuffed Chicken Filling

Ingredients

  • For the filling:
  • 5 oz. package soft garlic-and-herb cheese
  • 1 canned artichoke heart, chopped
  • 1 1/2 tbsp parsley, chopped
  • 1 1/2 tbsp dill, chopped
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper
  • 2 cups spinach
  • For grilling:
  • Remaining lemon oil

Directions

  1. For the filling: Mash half the garlic-and-herb cheese, artichoke heart, parsley, dill, and lemon zest in a bowl. Whisk lemon juice and olive oil; season with salt and pepper. Brush the pounded chicken with half of the lemon oil; top with spinach and the filling and roll up.

  2. For grilling: Brush with the remaining lemon oil, then grill as directed.
