Barbecue Bacon-Cheddar Stuffed Chicken Filling

Ingredients

  • For the filling:
  • 3 slices bacon
  • 2 tbsp bacon drippings
  • 2 tbsp butter, melted
  • 1 large buttermilk biscuit
  • 2/3 cup shredded cheddar
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley
  • 2 to 3 tbsp water
  • Salt and pepper
  • For grilling:
  • 1/4 cup barbecue sauce

Directions

  1. For the filling: Cook bacon in a skillet until crisp; crumble. Mix bacon drippings and melt butter. Crumble biscuit into a bnowl, then add the bacon, half of the drippings mixture, cheddar, chives and parsley. Stir in water; season with salt and pepper. Brush the pounded chicken with the remaining drippings mixture; top with the filling and roll up.

  2. For grilling: Brush with barbecue sauce during the last 2 minutes of cooking.
