Corn with Basil Butter

Ingredients

  • 4 tbsp unsalted butter, at room temp
  • 1/4 cup fresh basil
  • Grated zest of 1 lemon
  • 1 garlic clove
  • Kosher salt
  • 4 ears of corn, grilled
  • Black pepper
  • Shredded Parmesan, for topping

Directions

  1. Combine the butter, basil, lemon zest, garlic and a pinch of salt in a food processor. Puree until smooth.

  2. Spread the basil butter on the grilled corn. Season with salt and pepper; sprinkle with shredded Parmesan.
