Outback’s French Onion Soup

Ingredients

  • 2 cups sweet yellow onions, quartered and sliced
  • 1/2 cup sweet cream butter
  • 1/2 tsp salt
  • 1 tbsp flour
  • 4 cups beef stock
  • 1 tbsp fresh thyme
  • 1 tsp black pepper
  • 4 baguette slices
  • 8 slices Provolone

Directions

  1. Melt the butter in a stock pot over medium heat.

  2. Add the onions and salt, and saute for 3 minutes or until translucent but not browned. Add the flour and stir.

  3. Add the beef stock, increase the heat to medium-high and bring to a boil. Let boil for 1 minute.

  4. Reduce the heat to low, season with thyme and black pepper. Cover and let simmer for 25 to 30 minutes.

  5. While the soup is simmering, toast the baguette slices to medium golden brown. Make sure each slice will fit comfortably in your soup bowl.

  6. Preheat the broiler.

  7. When the soup is done simmering, ladle it into oven proof serving bowls.

  8. Top each bowl with a toasted baguette slice and 2 slices of Provolone. Place under the broiler for 1 to 2 minutes, or until the cheese is well melted and lightly caramelized.

  9. Remove from the broiler carefully and serve immediately.
