Chipotle’s Chicken

Ingredients

  • 2 1/2 lbs. chicken breasts
  • Olive oil or cooking spray
  • Marinade:
  • 7 oz. chipotle peppers in adobo sauce
  • 2 tbsp olive oil
  • 6 garlic cloves, peeled
  • 1 tsp black pepper
  • 2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp dry oregano

Directions

  1. Pour all the marinade ingredients in a food processor or blender and blend until you get a smooth paste.

  2. Pound the chicken until is has a thickness between 1/2 to 3/4 inch. Place chicken in a Ziploc bag. Pour the marinade over the chicken and stir until well coated. Place the chicken in the fridge and let marinate overnight or up to 24 hours.

  3. Cook the chicken over medium to high heat on a oiled and preheated grill for 3 to 5 minutes per side.

  4. Let rest before serving. Cut into cubes to add to salads, tacos or quesadillas or serve as is.
