Firecraker meatballs

Ingredients

  • Olive oil
  • 2 TBSP sesame seeds
  • 2 cup water
  • 1 cup jasmine rice
  • 1lb ground beef
  • 1/2 cup bread crumbs
  • 4 green onions (separate whites from tops)
  • 2 thumbs minced fresh ginger
  • 4 TBSP soy sauce
  • salt and pepper
  • 4 Tbsp Mayonnaise
  • 4 Tbsp Sour cream
  • 4 tsp honey
  • 2 tsp siriacha
  • 1 tsp chili flakes (optional)

Directions

  1. Preheat oven to 425

  2. In small pot over medium-high heat, drizzle a little olive oil and add 1TBSP sesame seeds. Cook, stirring until golden brown (1-2 min). Add rice and water. Bring to a boil, cover and reduce heat. Simmer rice on low until water is evaporated and rice is tender (15-18 min)

  3. In large bowl, combine beef, bread crumbs, whites of green onions-minced, minced ginger, all but 4 tsp off the soy sauce, salt and pepper to taste. blend together and form into 1 1/2" meatballs. place meatballs on a baking sheet drizzled with a little oil and bake on top rack of oven for 14-16 min, until cooked through.

  4. In another large bowl, combine mayonnaise, sour cream, honey, 4 tsp soy sauce, and Sriracha. When meatballs are cooked, place them in the bowl of sauce and coat evenly. Serve on top of cooked rice and top with chopped onion tops and remaining sesame seeds.
