Weeknight Goulash

Ingredients

  • 1 lb. beef stew meat
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 1 small onion, chopped
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire
  • 1 1/2 tsp brown sugar
  • 1 1/2 tsp paprika
  • 1/4 tsp ground mustard
  • 1 tbsp all-purpose flour
  • 2 tbsp water
  • Hot cooked egg noodles or spaetzle

Directions

  1. In a large skillet, brown beef in oil; drain. Transfer to a slow cooker. Combine the broth, onion, ketchup, Worcestershire, brown sugar, paprika, and mustard. Pour over the beef. Cover and cook on LOW until meat is tender, 8-10 hours.

  2. In a small bowl, combine flour and water until smooth. Gradually stil into beef mixture. Cover and cook on HIGH 30 minutes longer or until thickened. Serve with noodles.
