Marsala Steak with Tomatoes and Mushrooms

Ingredients

  • 1 1/2 tsp kosher salt, divided
  • 1 1/2 tsp black pepper, divided
  • 2 bone-in rib-eye steaks
  • 1/4 cup unsalted butter, melted
  • 1 tbsp chopped fresh oregano
  • 1 1/2 lbs. cremini mushrooms, halved if large
  • 1 pint cherry tomatoes
  • 4 garlic cloves, smashed
  • 3/4 cup Marsala wine
  • 1/2 tsp cornstarch
  • Garnish: chopped fresh oregano

Directions

  1. eheat oven to 400. Line a 17×12-inch rimmed baking sheet with parchment paper.

  2. Sprinkle 1 tsp salt and 1 tsp pepper all over steaks. Place on one side of prepared pan.

  3. In a large bowl, whisk together melted butter, oregano, remaining 1/2 tsp salt and remaining 1/2 tsp pepper. Stir in mushrooms, tomatoes and garlic. Place mushroom mixture on other side of prepared pan.

  4. In a small saucepan, bring wine and cornstarch to a boil over medium-high heat. Cook, whisking occasionally, for 5 minutes; pour all over steaks and veggies.

  5. Bake for 15 minutes; turn steaks. Increase oven temp to broil and broil until steaks are cooked to your liking, 5 to 10 minutes. Garnish with oregano.
