Apple and Shallot Pork Roast

Ingredients

  • 8 lb. boneless pork loin, trimmed and halved
  • 8 tbsp olive oil, divided
  • 2 1/2 tbsp kosher salt, divided
  • 5 tsp black pepper, divided
  • 5 small apples, halved
  • 2 bulbs fennel, quartered
  • 4 shallots, quartered
  • 2 heads garlic, tops cut off
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 4 sprigs fresh rosemary

Directions

  1. eheat oven to 375.

  2. Rub pork pieces all over with 4 tbsp olive oil; sprinkle 2 tbsp salt and 4 tsp pepper all over pork.

  3. Heat a 15-inch cast-iron skillet over medium-high heat. Add 2 tbsp oil. Add pork, fat side down; cook until browned all over, 3 to 4 minutes per side. Remove from heat.

  4. In a medium bowl, stir together apples, fennel, shallots, garlic, remaining 2 tbsp oil, remaining 1/2 tbsp salt, and remainin 1 tsp pepper. Add apple mixture, wine, broth, and rosemary to skillet.

  5. Bake until cooked through, about 30 minutes. Reserve garlic heads for Roasted Garlic Mashed Potatoes (see recipe). Let pork stand for 10 minutes before serving.
