Potato Salad with Green Beans

  • 2 lbs. quartered Yukon Gold potatoes
  • Salt
  • 1/2 lb. green beans, halved
  • 1/3 cup mayo
  • 1/4 cup sour cream
  • 2 tbsp grainy mustard
  • 1/4 cup chopped mixed herbs
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 2 celery stalks, chopped
  • 1/2 red onion, sliced


  1. Cook potatoes in salted boiling water until tender, adding green beans in the last 4 to 5 minutes. Drain and rinse under cold water. Whisk mayo, sour cream, mustard, mixed herbs, lemon juice and salt and pepper to taste. Toss with the vegetables along with celery and red onion.
