Carne Asada Burgers with Avocado and Yuca Fries

Ingredients

  • 2 kaiser rolls
  • 1 lb. yuca
  • 1 plum tomato
  • 1 lime
  • 1 garlic clove
  • 1 red onion
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 2 oz. mayo
  • 1 avocado
  • 12 oz. ground beef
  • 2 slices Monterey Jack
  • 3 1/2 tbsp canole oil
  • Kosher salt and black pepper

Directions

  1. eheat oven to 425. Slice rolls open horizontally. Cut yuca lengthwise into 1/4-inch fries. Rinse tomato, trim and discard ends, then cut into 4 equal slices. Halve lime. Mince garlic. Peel onion and thinly sliced into wings.

  2. On 1 baking sheet, toss yuca with 2 tbsp oil, onion powder, paprika, 1/2 tsp salt and pepper. Arrange in a single layer and roast, flipping halfway through, until tender and crisp, 25 minutes total. Meanwhile, on a separate baking sheet, toss tomato and onion with 1 tbsp oil, 1/4 tsp salt and pepper. Roast (with yuca) until tomato has softened and onion begins to char, about 15 minutes.

  3. While veggies roast, add garlic, 1/8 tsp salt and pepper to a container with mayo and stir to combine. Halve avocado and discard pit. Using a spoon, carefully scoop out flesh into a medium bowl, discarding skin. Add juice of 1 lime, 1/4 tsp salt and pepper to bowl with avocado, and mash with a fork until mostly smooth. Set aioli and avocado aside until ready to serve.

  4. In a separate medium bowl, combine 1/2 tsp salt and pepper. Pat beef dry with paper towel and add to bowl with seasoning. Using your hands, mix well and then form into 2 equal patties. Using your thumb, create a dimple on top of each.

  5. Heat 1/2 tbsp oil in a large pan over medium-high heat. When oil is shimmering, add burgers and sear, without flipping, about 4 minutes. Flip burgers, top with Monterey Jack, and reduce heat to medium. Sear until cheese is melted and burgers are browned and medium rare, 3 to 4 minutes more. Transfer burgers to a plate, cover loosely with foil, and set aside to rest for about 5 minutes.

  6. While burgers rest, wipe pan clean and return to medium heat. Place buns cut-side down in pan and toast until light golden, 2 to 3 minutes. Layer rolls with burgers, then mashed avocado, then roasted tomato and onion. Serve with yuca fries and garlic aioli for dipping.
