Slow Cooker Carolina Pulled Pork

Ingredients

  • 2 1/2 lbs. pork shoulder
  • 1 packet Smoky BBQ Slow Cooker Spice Blend (by the zen of slow cooking)
  • 1/4 cup cider vinegar
  • Dipping:
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • 2 tbsp tomato ketchup
  • 1 tbsp brown sugar
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • Dash of tabasco

Directions

  1. Rub the pork with the spice blend; transfer to slow cooker.

  2. Add 1/4 cup of the cider vinegar to the pork directly in the slow cooker. Cover and cook on LOW 8 to 10 hours or HIGH 5 hours.

  3. Shred the pork in the slow cooker using 2 forks.

  4. Mix the remaining ingredients for the dipping sauce. Serve in a bowl and spoon over your pulled pork as desired.
