Chicken Soup with Dumplings

Ingredients

  • 2 tbsp ginger, chopped
  • 2 garlic cloves, sliced
  • 2 scallions, sliced
  • 2 celery stalks, sliced
  • Vegetable oil
  • 4 cups chicken broth
  • 2 cups water
  • 8 frozen dumplings or 16 frozen mini wontons
  • 2 heads baby bok choy (leaves), trimmed and chopped
  • 1 cup shredded rotisserie chicken
  • 1 tsp soy sauce
  • Salt
  • Sesame oil and scallions, for serving

Directions

  1. Cook ginger and garlic, scallions and celery in vegetable oil in a saucepan over medium-high heat until softened, about 3 minutes. Add chicken broth and water. Bring to a simmer and cook until the vegetables are tender, 5 minutes. Add dumplings, bok choy leaves, chicken and soy sauce. Simmer until warmed through, 3 to 5 minutes; season with salt. Divide among 4 bowls; drizzle with sesame oil and top with scallions.
