Mediterranean Chicken Bowls

Ingredients

  • 1 cup bulgur
  • Salt
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 small shallot, minced
  • 1 tsp ground cumin
  • 1 tsp Dijon
  • Salt and pepper
  • 2 cups shredded rotisserie chicken
  • 2 cups kale, shredded
  • 1 cup romaine, shredded
  • 1/2 cup cucumber, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup cherry tomatoes
  • Hummus
  • Parsley, chopped
  • Pita bread, for serving

Directions

  1. Cook bulgur as directed; season with salt. Whisk olive oil, vinegar, shallot, cumin and Dijon in a bowl; season with salt and pepper. Toss half of the dressing with chicken. Toss the other half of the dressing with kale, romaine, cucumber, red bell pepper, and cherry tomatoes. Divide the bulgur among 4 bowls; top with the kale mixture and chicken. Top with hummus and chopped parsley. Serve with pita bread.
