Mediterranean Cheese Grillers

Ingredients

  • Spread:
  • 2 oz. shredded mozzarella
  • 12 pitted kalamata olives, finely chopped
  • 2 medium garlic cloves, minced
  • 1 1/2 tsp chopped fresh oregano
  • Filling:
  • 8 slices mulitgrain bread
  • 4 tsp Dijon
  • 12 large basil leaves
  • 2 medium tomatoes, cut into 4 slices each
  • 1 tbsp canola oil

Directions

  1. In a small bowl, combine the spread ingredients and set aside.

  2. Place four bread slices on a clean work surface. Top each bread slice with equal amounts of the cheese mixture, 3 basil slices, and 2 tomato slices. Spread one side of the remaining bread slices with the mustard and place mustard side down on top of the tomatoes.

  3. Heat the oil in a large nonstick skillet over medium heat. Place the sandwiches in the skillet and cook 2 to 3 minutes on each side, or until golden.
