Romaine with Croutons and Creamy Dill Dressing

Ingredients

  • 2 slices sandwich bread, each slice cut into 16 cubes
  • Cooking spray
  • 6 cups romaine, torn
  • 1/2 medium cucumber, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • Dressing:
  • 1/3 cup buttermilk
  • 3 tbsp mayo
  • 1 tsp cider vinegar
  • 2 medium garlic cloves, minced
  • 1 tsp dried dill weed
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Directions

  1. Lightly coat the bread cubes with cooking spray, place on baking sheet. Turn oven on 350 (do not preheat oven) and bake 8 minutes or until lightly golden. Cool completely.

  2. Meanwhile, in a small bowl whisk together the dressing ingredients.

  3. In a large bowl, combine the romaine, cucumber and onion. Pour the dressing over all and toss gently until well coated. Add the bread cubes and toss gently.
