Lemon Chicken

Ingredients

  • 2 tbsp olive oil, divided
  • 4 chicken breasts, flattened
  • 1 cup sliced mushrooms
  • 1/2 cup white wine
  • Juice of 1 lemon
  • 2 tbsp capers
  • 1 tsp chopped fresh dill, plus additional for garnish
  • 1/4 tsp salt
  • Lemon wedges

Directions

  1. Heat 1 tbsp oil in large nonstick skillet over medium-high heat. Add chicken; cook 3 to 4 minutes or until chicken begins to brown.

  2. Meanwhile, combine mushrooms, wine, lemon juice, capers, dill and salt in medium bowl; mix well.

  3. Turn chicken; pour mushroom mixture evenly over chicken. Reduce heat to medium low; cover and simmer 8 minutes or until chicken is no longer pink in center.

  4. Remove chicken to serving platter; cover to keep warm. Increase heat to medium-high; boil liquid in skillet 1 minute to reduce slightly. Remove from heat; stir in remaining 1 tbsp oil. Garnish with additional dill and lemon wedges.
