Beef Tenderloin with High Spice Rub

Ingredients

  • 1 tbsp onion powder
  • 2 tsp dried thyme
  • 1 tsp ground cumin
  • 3/4 tsp ground allspice
  • 1 tsp black pepper or lemon pepper
  • 1/8 tsp ground red pepper
  • 1/2 tsp salt
  • 2 lbs. beef tenderloin
  • 1 tbsp olive oil
  • 1/4 cup water

Directions

  1. Combine onion powder, thyme, cumin, allspice, black pepper, red pepper and salt in small bowl. Sprinkle evenly over all sides of beef, pressing down firmly so seasonings will adhere. Wrap tightly with plastic wrap; refrigerate 24 hours.

  2. eheat oven to 400. Line large rimmed baking pan with foil. Heat oil in large skillet over medium-high heat. Add beef; cook 5 minutes or until well-browned, turning once. Transfer beef to prepared pan. Add water to skillet; cook 15 seconds, scraping up browned bits from bottom to skillet. Drizzle over beef.

  3. Roast, uncovered, 25 minutes until desired doneness. Tent with foil; let stand 10 minutes. Slice beef; drizzle with pan drippings.
