Pork Roast with Dijon Tarragon Glaze

Ingredients

  • 1/3 cup chicken broth
  • 2 tbsp lemon juice
  • 2 tbsp Dijon
  • 1 tsp minced fresh tarragon
  • 1 1/2 to 2 lbs. boneless pork loin
  • 1 tsp ground paprika
  • 1/2 tsp black pepper

Directions

  1. Combine broth, lemon juice, mustard and tarragon in small bowl; mix well. Sprinkle pork with paprika and pepper; place in slow cooker. Spoon mustard mixture evenly over pork. Cover; cook on LOW 6 to 8 hours.

  2. Remove pork from slow cooker; let stand 15 minutes before slicing.
