Cuban Garlic and Lime Pork Chops

Ingredients

  • 4 boneless pork chops
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tbsp orange juice
  • 2 tsp minced garlic
  • 1/2 tsp salt, divided
  • 1/2 tsp red pepper flakes
  • 2 small seedless oranges, peeled and chopped
  • 1 medium cucumber, peeled, seeded and chopped
  • 2 tbsp chopped onion
  • 2 tbsp chopped fresh cilantro

Directions

  1. Place pork in a large Ziploc bag. Add oil, lime juice, orange juice, garlic, 1/4 tsp salt and red pepper flakes. Seal bag; turn to coat. Marinate in fridge up to 24 hours.

  2. Combine oranges, cucumber, onion and cilantro in medium bowl; toss gently. Cover and refrigerate salsa at least 1 hour or overnight. Add remaining 1/4 tsp salt just before serving.

  3. Prepare grill for direct grilling. Remove pork from marinade; discard marinade. Grill 6 to 8 minutes per side or until pork is no longer pink in center. Serve with salsa.
