Savory Pumpkin Hummus

Ingredients

  • 15 oz. can solid-pack pumpkin
  • 3 tbsp chopped fresh parsley, plus additional for garnish
  • 3 tbsp tahini
  • 3 tbsp fresh lemon juice
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp ground red pepper, plus additional for garnish

Directions

  1. Combine pumpkin, 3 tbsp parsley, tahini, lemon juice, garlic, cumin, salt, black pepper and 1/8 tsp red pepper in food processor or blender; process until smooth. Cover and refrigerate at least 2 hours. Sprinkle with additional red pepper. Garnish with additional parsley.
