Thai-Style Chicken

Ingredients

  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper
  • 3 bone-in chicken breasts
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1/3 cup canned unsweetened coconut milk
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 3 cups hot cooked couscous
  • 1/4 cup chopped fresh cilantro
  • Lime wedges

Directions

  1. Combine ginger, salt, and ground red pepper in a small bowl; sprinkle over chicken. Place onion and garlic in slow cooker; top with chicken. Stir coconut milk, peanut butter and soy sauce in a small bowl; pour over chicken. Cover; cook on LOW 6-7 hours. Remove chicken to serving bowl. Cover loosely with foil.

  2. Stir water into cornstarch in small bowl until smooth; whisk into slow cooker. Cover; cook on HIGH 15 minutes or until sauce is slightly thickened. Spoon sauce over chicken. Serve chicken over couscous; top with cilantro. Garnish with lime wedges.
