Corn with Scallion-Lime Butter

Ingredients

  • 1/2 stick softened unsalted butter
  • Grated zest of 1 lime
  • 2 scallions, sliced
  • 1/4 tsp kosher salt
  • 4 ears of corn
  • Salt and pepper

Directions

  1. Pulse butter, lime zest, scallions and kosher salt in a food processor. Boil corn until tender, about 4 minutes. Drain and spread with the butter. Season with salt and pepper.
