Parmesan-Basil Corn Cakes

Ingredients

  • 2 ears of corn
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped basil
  • 1 tbsp cornstarch
  • 1/2 tsp kosher salt
  • Black pepper

Directions

  1. Cut the kernels off corn. Pulse half the corn and egg in a food processor, then transfer to a bowl. Mix in the remaining corn, flour, grated Parmesan, chopped basil, cornstarch, kosher salt and black pepper. Cook spoonfuls in an oiled skillet until golden, 3 to 4 minutes per side.
