Greek Island Chicken Shish Kebabs

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb. chicken breasts, cut into 1 1/2-inch pieces
  • 2 large green and/or red bell peppers, cut into 1-inch pieces
  • 1 large onion, quartered and separated into pieces
  • 12 cherry tomatoes
  • 12 fresh button mushrooms
  • Packaged tzatziki sauce
  • Toasted pita wedges

Directions

  1. Whisk together oil, lemon juice, garlic, cumin, oregano, thyme, salt and black pepper in a large bowl. Add chicken and toss to coat. Chill, covered, at least 2 hours.

  2. Preheat an outdoor grill to medium heat.

  3. Remove chicken from marinade and shake off excess liquid; discard marinade. Thread chicken with bell peppers, onion, cherry tomatoes, and mushrooms onto 10-inch skewers.

  4. Lightly grease grill rack. Grill kebabs until chicken is browned and no longer pink in the center and veggies are tender, about 10 minutes. Serve with tzatziki and pita wedges.
