Pineapple Ginger Chicken Stir Fry

Ingredients

  • Boneless chicken breasts, cubed
  • 2 tbs peanut oil
  • 2 c pineapple chunks
  • 3 tbs molasses
  • 2 tbs lime juice
  • 1/4 tsp red pepper flakes
  • 8 green onions, chopped
  • 1/4 c minced crystalized ginger

Directions

  1. Stir fry chicken in hot oil until brown—abojut 6 minutes. Remove chicken and add pinepple and molasses to wok and stir fry until tender. Stir in lime juice, pepper flakes, green onions and chicken. Saute until onions tender. Toss in ginger and serve over rice.
