Warm Grilled Corn-Potato Salad

Ingredients

  • 5 ears fresh corn
  • 1 red onion, sliced into 1/2-inch rings
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 cup green beans
  • 1 1/2 lbs. Yukon Gold potatoes
  • 2 tbsp chopped fresh thyme leaves
  • 2 tsp chopped fresh sage leaves
  • 1 tbsp chopped parsley
  • 1 1/2 cups sour cream
  • 1 cup canned creamed corn
  • 2 tbsp fresh lemon juice
  • Salt and black pepper, to taste

Directions

  1. Brush corn and onion rings with olive oil, lime juice, and salt and pepper. Place corn directly on medium-high grill, turning until crisp tender. Scrape kernels from husks after grilling.

  2. Clean and cut green beans into 2-inch pieces. Blanch in boiling water for 2 minutes, until crisp-tender.

  3. Cut potatoes into 1-inch thick wedges. Place potatoes in cold water and bring to a boil. Boil 10 minutes or until just tender. Drain completely. While potatoes are warm, season with salt and pepper.

  4. Place warm potatoes in a mixing bowl and gently toss with thyme, sage, parsley, sour cream, creamed corn and lemon juice. Mix in grilled corn, onions and green beans. Season to taste with salt and pepper.
