Sweet Potato-Sausage Balls

Ingredients

  • 2 tsp olive oil
  • 1 tbsp minced shallot
  • 1 tbsp minced seeded jalapeno
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups plain yellow cornmeal
  • 2 1/4 tsp baking powder
  • 2 tsp kosher salt
  • 1/4 tsp ground red pepper
  • 15 oz. can sweet potato puree
  • 8 oz. cream cheese, softened
  • 1 1/2 lbs. ground mild pork sausage
  • 2 cups shredded sharp Cheddar cheese
  • Pepper jelly, to serve

Directions

  1. preheating, preheat air fryer to 375.

  2. In a medium skillet, heat oil over medium-high heat. Add shallot and jalapeno; cook until softened, about 5 minutes.

  3. In a large bowl, whisk together flour, cornmeal, baking powder, salt and red pepper. Stir in sweet potato, cream cheese, shallot mixture, sausage and Cheddar, until well combined. Shape mixture into 1 1/2-inch balls.

  4. Working in batches, add sausage balls to air fryer basket. (Keep remaining sausage balls in fridge until ready to cook.) Set temp to 375 and cook until golden brown and cooked through, about 10 minutes. Serve with pepper jelly.
