Sweet Potato Shepherd’s Pie

Ingredients

  • 1 lb. ground sirloin
  • 1 lb. ground pork
  • 15 oz. can crushed tomatoes
  • 14 oz. bag frozen pearl onions, thawed
  • 1 cup diced carrot
  • 1 cup frozen peas
  • 1/2 cup beef broth
  • 6 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 tbsp balsamic vinegar
  • 2 tsp kosher salt
  • 2 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 4 large sweet potatoes, peeled and chopped
  • 1/3 cup heavy whipping cream

Directions

  1. eheat oven to 350. Spray a 3-quart baking dish with cooking spray.

  2. In a large skillet, cook beef and pork over medium-high heat until browned and crumbly; drain. Stir in tomatoes, onions, carrot, peas, broth, garlic, tomato paste, vinegar, salt, thyme, basil, paprika, and pepper, and bring to a boil. Reduce heat to low and simmer for 10 minutes. Pour mixture into prepared pan.

  3. Meanwhile, in a large saucepan, bring potatoes and water to cover to a boil over high heat. Reduce heat; simmer until very tender, 10 to 15 minutes. Drain well.

  4. In a large bowl, mash sweet potatoes and cream with a potato masher until smooth. Spread potatoes onto meat mixture.

  5. Bake for 30 minutes. Increase oven temp to broil. Broil until potato is lightly browned, about 5 minutes. Serve immediately.
