Stir-Fried Pineapple Chicken

Ingredients

  • 1/2 lb boneless chicken
  • 1 lb can pineapple tidbits, save liquid
  • peanut oil
  • salt
  • chicken broth or stock
  • 1 TBSp corn starch
  • sesame oil (optional)
  • 1 tsp brandy
  • 1 tsp soy sauce
  • 1 tsp sugar

Directions

  1. Cut chicken into thin slices. Heat several TBSP oil in bottom of Wok. Add pineapple, several dashes of salt, and enough broth to cover. Cook for 1 min. Add chicken and corn starch, diluted in water, to make a tick paste, sesame oil, brandy, soy sauces, and sugar. Slowly add pineapple juice a little at a time- to taste. Cook for 2-3 min, stirring constantly. Serve
