Praline Bread Pudding with Caramel-Pecan Sauce

Ingredients

  • 8 large eggs
  • 4 cups half-and-half
  • 3/4 cup light brown sugar
  • 1 tbsp vanilla extract
  • 1 1/4 tsp kosher salt, divided
  • 1 tsp ground cinnamon
  • 14 cubes cubed challah bread (about 1 large loaf)
  • 1 1/2 cups chopped pecans, divided
  • 1/2 cup golden raisins
  • 1/2 cup dark brown sugar
  • 6 tbsp all-purpose flour
  • 4 tbsp unsalted butter, softened
  • Caramel-Pecan Sauce (see recipe)

Directions

  1. Spray a 13×9-inch baking dish with cooking spray.

  2. In a very large bowl, whisk together eggs, half-and-half, light brown sugar, vanilla, 1 tsp salt and cinnamon until combined. Stir in bread, 1/2 cup pecans and raisins. Pour mixture into prepared pan; let stand at room temp for 1 hour.

  3. eheat oven to 350.

  4. In a small bowl, whisk together dark brown sugar, flour, and remaining 1/4 tsp salt; stir in butter and remaining 1 cup pecans until combined. Sprinkle onto bread mixture.

  5. Bake until puffed and center is set, about 40 minutes. Let cool for 30 minutes. Serve warm with Caramel-Pecan Sauce.
