tomato gratin

Ingredients

  • extra virgin olive oil
  • 4 C bread crumbs-into 1 inch cubes from firm bread, like ciabatta
  • 2 clove garlic
  • 5 C cut tomatoes
  • 1 t salt
  • 1 T sugar
  • black pepper
  • 1 C grated Asiago cheese
  • 2 T chopped fresh basil

Directions

  1. heat oven to 350

  2. Heat 2 T olive oiling stovetop oven casserole dish and brown bread crumbs in batches, transfer them to bowl, and more oil as needed and brown all crumbs

  3. Heat 1 T oil win the same pan and add garlic, cook, stir in tomatoes, salt, sugar and pepper and cook until tomatoes exude their juices.

  4. Return bread crumbs to pan and press down into tomatoes

  5. Sprinkle cheese on top

  6. Bake 20-30 minutes until set

  7. Sprinkle basil on top
