Mashed Cauliflower with Parmesan

Ingredients

  • 1 large head cauliflower, broken into florets
  • 1 cup shredded Parmesan, divided
  • 1/3 cup heavy whipping cream or half-and-half
  • 1 tbsp butter
  • 1/2 tsp black pepper
  • Minced fresh parsley

Directions

  1. Place 1 inch water and the cauliflower in a large saucepan; bring to a boil over high heat. Cook, covered, until very soft, 10 to 12 minutes. Drain. Mash cauliflower to desired consistency. Stir in 1/2 cup cheese, cream, butter and pepper. Sprinkle with remaining 1/2 cup cheese and parsley.
