Garden Burger

Ingredients

  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • 1 tsp. snipped fresh thyme
  • 1/2 tsp. cracked black pepper
  • 2 medium yellow summer squash, cut lengthwise (1/4-1/2 inch thick slices)
  • 1 lb. 90 percent lean ground beef
  • 4 oz. blue cheese
  • 4 hamburger buns
  • Arugula or lettuce

Directions

  1. For dressing, in bowl whisk oil, vinegar, thyme, and pepper. Brush squash with some of the dressing.

  2. In bowl, combine beef and 1/4 tsp. each salt and pepper. Shape into four 3/4" patties.

  3. For charcoal grill, cook patties on the rack of an uncovered grill directly over medium coals 14 to 18 minutes or until meat is done, turning once. Cook squash alongside beef for 7-10 minutes or until tender, turn once. (For gas grill, preheat grill. Reduce to medium. Cover, grill as above.

  4. To serve: drizzle dressing on cut side of bun tops. Layer remaining ingredients.
