Flavored butters for grilled corn

Ingredients

  • 1 small ripe avocado
  • chili powder
  • salt
  • black pepper
  • cumin
  • 1 c unsalted butter
  • minced smoked salmon
  • minced fresh dill
  • minced cooked bacon
  • red pepper flakes
  • minced chives
  • minced sun-dried tomatoes
  • favorite fresh herbs

Directions

  1. Avocado: Mash small, ripe avocado, season with chili powder, salt, black pepper, and a pinch of cumin

  2. Smoked salmon: Beat 1/4 c unsalted butter until creamy. Beat in some minced smoked salmon, minced fresh dill and black pepper. Use immediately or shape into a block and chill.

  3. Bacon: Beat 1/4 c unsalted butter until creamy. Beat in some minced cooked bacon, a pinch red pepper flakes, minced chives and black pepper. Use immediately or shape into a block and chill until firm.

  4. Sun-dried tomatoes: Beat 1/4 c unsalted butter until creamy. Beat in some minced sun-dried tomatoes, a pinch red pepper flakes and salt and black pepper. Use immediately or chill.

  5. Herb Beat 1/4 c unsalted butter until creamy. Beat in your favorite fresh herbs (minced), salt and pepper. Use immediately or chill.
