Chili’s Monterey Chicken

Ingredients

  • 1 chicken breast
  • Salt and pepper, to taste
  • 2 tsp barbecue sauce
  • 2 slices of well cooked bacon
  • 1/4 cup mixture Monterey Jack and sharp Cheddar
  • 2 slices diced tomatoes
  • 1 tsp chopped chives

Directions

  1. Pound the chicken breast until it is flattened. Season with salt and pepper.

  2. Heat a skillet to medium-high heat and spray with nonstick cooking oil.

  3. Cook the chicken for 4 to 5 minutes per side, or until done. Transfer the chicken to a microwave-safe serving plate.

  4. Top the chicken with barbecue sauce, bacon and cheeses.

  5. Microwave for 1 to 2 minutes, until the cheese melts.

  6. Sprinkle with tomatoes and chives.
