Roasted Rosemary Chicken and Potatoes

Ingredients

  • 2 tbsp vegetable oil
  • 2 1/2 tsp kosher salt, divided
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 4 bone-in chicken breasts
  • 4 medium red potatoes, quartered
  • 1 large yellow onion, cut into wedges
  • 1 tbsp finely chopped fresh rosemary
  • Garnish: coarse salt, chopped fresh rosemary

Directions

  1. Preheat oven to 425.

  2. In a 12-inch ovenproof skillet, heat oil over medium-high heat. Reduce heat to medium. Sprinkle 2 tsp kosher salt, garlic powder and pepper all over chicken, potatoes, and onion. Add chicken, skin side down, to skillet; cook until golden brown, about 3 minutes per side.

  3. Add potatoes and onion to skillet; sprinkle with rosemary and remaining 1/2 tsp salt.

  4. Bake, stirring potatoes once, until chicken is cooked through and potatoes and onion are tender, about 35 minutes. Garnish with salt and rosemary.
