Apple Crumb Pie

Ingredients

  • Basic Pie Dough (see recipe)
  • Filling:
  • 5 medium Granny Smith apples, peeled, cored and thinly sliced
  • 2 Pink Lady apples, peeled, cored and thinly sliced
  • 1 1/4 cups granulated sugar, divided
  • 1/4 cup cornstarch
  • 2 tsp ground cinnamon
  • Topping:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup chopped walnuts
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • Caramel sauce and vanilla ice cream, to serve

Directions

  1. Preheat oven to 350.

  2. On a lightly floured surface, roll Basic Pie Dough into a 12-inch circle. Transfer to a 9-inch deep-dish pie plate, pressing into bottom and up sides. Trim excess dough to 1/2 inch beyond edges of pie plate. Fold edges under, and crimp as desired. Top with a piece of parchment paper, letting ends extent over edges of plate. Add pie weights.

  3. Bake for 15 minutes. Carefully remove paper and weights. Leave oven on.

  4. Meanwhile, for filling: In a large bowl, stir together all apples and 1 cup sugar. Let stand for 1 hour. Drain apples, discarding liquid. Return apples to bowl.

  5. In a small bowl, whisk together cornstarch, cinnamon and remaining 1/4 cup sugar; stir into apples. Spoon apple mixture into prepared crust.

  6. For topping: In a medium bowl, whisk together flour, brown sugar, walnuts, granulated sugar, cinnamon and salt; stir in melted butter until mixture is crumbly. Sprinkle mixture onto apples.

  7. Bake until topping is golden brown, 45-55 minutes. Let cool completely on a wire rack. Serve with caramel sauce and ice cream.
