Roasted Broccolini

Ingredients

  • 2 lbs. broccolini, trimmed
  • 2 large garlic cloves, sliced
  • 1/4 cup olive oil
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp red wine vinegar

Directions

  1. Preheat oven to 425.

  2. On a large rimmed baking sheet, toss together broccolini, garlic, oil, salt and pepper. Cover with foil.

  3. Bake for 10 minutes. Uncover and bake until tender and lightly browned, about 10 minutes more, stirring halfway through baking. Drizzle with vinegar. Serve immediately.
