Smoked Cheddar Puffs

Ingredients

  • 1 cup cold water
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup all-purpose flour
  • 1 tsp kosher salt
  • 1/4 tsp ground red pepper
  • 1/4 tsp black pepper
  • 4 large eggs
  • 1/4 cup shredded smoked Cheddar

Directions

  1. Preheat oven to 425. Line baking sheets with parchment paper.

  2. In a medium saucepan, bring 1 cup water and butter to a boil over medium heat. Remove from heat. Using a wooden spoon, stir in flour, salt and peppers. Return to heat. Cook, stirring vigorously, until mixture forms a ball, about 3 minutes. Remove from heat. Let cool for 5 minutes.

  3. In the bowl of a stand mixer fitted with the paddle attachment, beat flour mixture at high speed for 2 minutes. Add eggs, one at a time, beating well after each addition and stopping to scrape sides of bowl. Beat in cheese. Drop dough by tbsp ful 2 inches apart on prepared pans.

  4. Bake until puffed and golden brown, about 17 minutes. Serve immediately.
