Creamy Chive and Onion Mashed Potatoes

Ingredients

  • 4 lbs. potatoes, peeled and cubed
  • 6 cups water, or enough to cover the potatoes
  • 2 chicken bouillon cubes
  • 4 tbsp butter
  • 1/4 to 1/2 cup milk
  • 1 1/2 to 2 tsp salt
  • 1/8 tsp pepper
  • 8 oz. chive and onion cream cheese

Directions

  1. Place the potatoes in your slow cooker and cover with water completely. Add the bouillon cubes.

  2. Cover and cook on HIGH for 3 to 4 hours, or until they are tender with a fork.

  3. Drain the potatoes and wash out the inside of your slow cooker with HOT water to prevent the slow cooker from cracking.

  4. Return the potatoes to the slow cooker. Add the butter, milk, salt and pepper.

  5. At this point you can use a potato masher or immersion blender to make your mashed potatoes as smooth or chunky as you would like them.

  6. Next, add the cream cheese (and a bit more milk if needed to reach desired consistency) and mix until well-blended.
