Ingredients

  • 3 tbsp butter, divided
  • 1 1/4 tbsp onion, minced
  • 1 boiled potato, cold
  • 1/4 lb. ground beef
  • 1/4 lb. ground pork
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup water
  • 1/8 cup breadcrumbs
  • Salt, to taste
  • White pepper, to taste
  • Sauce:
  • 1 tbsp all-purpose flour
  • 1 tbsp butter
  • 1/2 cup beef stock
  • 1/4 cup cream
  • For serving:
  • Boiled potatoes
  • Lingonberry jam

Directions

  1. To make the meatballs, melt 2 tbsp of the butter in a pan over medium-high heat. Add onion and cook until transparent, about 1 to 2 minutes.

  2. In a bowl, mash a potato. Then, combine with cooked onion, beef, pork, egg, milk and breadcrumbs. Season with salt and white pepper, to taste.

  3. Flour cutting board and form meat into round 1-inch balls.

  4. In previous pan, melt remaining butter and cook on low heat until meatballs are cooked through, about 4 to 6 minutes, stirring a few times. Don’t overcrowd the pan, work in batch if needed.

  5. Transfer to a plate and cover with foil to keep warm.

  6. To make the sauce, heat butter in a saucepan over medium heat. Stir in flour and cook until golden brown. Pour in stock and cream, and whisk until smooth. Flavor with salt and pepper, to taste.

  7. Pour sauce onto meatballs and serve with boiled potatoes and lingonberry jam.
