Buffalo Cauliflower Bites with Ranch Dipping Sauce

Ingredients

  • Buffalo Bites:
  • Cooking spray
  • 1/2 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/2 tsp black pepper
  • 1 cauliflower head, trimmed and core discarded, florets cut into bite-size pieces
  • 2 tbsp unsalted butter, melted
  • 1/4 cup hot sauce
  • Dipping sauce:
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 2 tbsp buttermilk
  • 1 tsp lemon juice
  • Splash of apple cider vinegar
  • Handful of fresh chives, chopped
  • Sea salt and black pepper

Directions

  1. Preheat the oven to 450. Generously coat an 11×17-inch rimmed baking sheet with cooking spray.

  2. Make the buffalo bites: Combine the flour, garlic powder, salt, pepper and 1/2 cup of water in a large bowl. Add the cauliflower and toss until well coated. Arrange the cauliflower in a single layer in the prepared pan. Bake for 18 minutes, turning halfway through, until golden on both sides.

  3. Meanwhile, whisk together the butter and hot sauce in a small bowl. Pour over the cauliflower, stirring to make sure it’s well coated. Bake for 20 minutes more, turning halfway through, until crispy.

  4. Make the dipping sauce: In a medium, whisk together the mayo, sour cream, buttermilk, lemon juice, and vinegar. Stir in the chives and season with salt and pepper.

  5. Serve the hot cauliflower bites with the dipping sauce.
