Bacon Gougeres

Ingredients

  • 1 cup water
  • 1 stick butter, sliced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup flour
  • 4 eggs
  • 6 thick-cut bacon slices, cooked and finely chopped
  • 3/4 cup smoked gouda, grated, plus more for serving
  • 2 tbsp chopped chives

Directions

  1. Bring water, butter, salt and pepper to a boil in a saucepan. Add flour, reduce the heat to low and cook, stirring, until the mixture pulls away from the pan and looks shiny, about 3 minutes.

  2. Transfer the dough to a stand mixer; beat in 4 eggs, one at a time, on medium speed until smooth. Stir in bacon, gouda and chives. Transfer to a piping bag; snip off the end. Pipe tbsp-size mounds onto 2 parchment-lined baking sheets. Sprinkle with more gouda.

  3. ke at 400, until the gougeres are puffed and golden, 25-30 minutes, rotating the pan after 20 minutes. Makes 35-40.
